Energy Balls

One our families favorite snacks. There are recipes all over for energy balls of all varieties but this is what we use. It’s so simple and made with things we usually have on hand. It’s the perfect snack for me as a runner and for my athletic boys. Perfect for lunchboxes, as long as you’re not one of those peanut free schools… Those kids ruin it for everyone. (It’s a joke so don’t come at me).

*notes: I usually use flax meal instead of flax seeds because we almost always have that. I like it better than the seeds because they don’t get stuck in my teeth. I use about ⅓ cup.

Easy Energy Balls

Ingredients:

  • 1 cup old-fashioned oats
  • ⅔ cup coconut flakes
  • ½ cup peanut butter
  • ⅓ cup honey (or maple syrup)
  • ½ cup chocolate chips
  • ½ cup ground flaxseeds (optional but recommended)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions:

  1. In a medium bowl, mix all ingredients together until well combined.
  2. Chill the mixture in the fridge for about 20–30 minutes (this makes rolling easier).
  3. Roll into small balls (about 1 tablespoon each).
  4. Store in an airtight container in the fridge for up to a week—or freeze for longer storage.

That’s it. Simple, quick, and always a hit.
