This “better for you” version of no bake cookies is made with maple syrup (or honey) as a natural sweetener, and coconut oil is used in place of butter. Maple syrup and honey provide a more wholesome sweetness compared to refined sugars, and coconut oil adds healthy fats that are great for kids’ growth and energy. Quick oats are typically the best option for a smoother texture, but rolled oats work just as well. I only had rolled oats on hand, so that’s what’s pictured below.
For an even healthier twist, you can add chia seeds, flaxseeds, or a handful of dark chocolate chips for some extra nutrients without compromising flavor.
